This nachos and cheese snack has been in my repertoire since I was about 10 years old, so you know it's an easy recipe for nachos. A friend showed it to me and I've been hooked ever since.
Of all the nacho cheese recipes, this cheese nachos is very simple to make and tastes great. It may not be the healthiest snack around, but you've got to indulge yourself every so often!
As you probably know, a regular nachos has corn chips, cheese, salsa, meat, beans and lots of other things in it. This snack just keeps the corn chips and cheese, but you could use any snack chip you like.
Take a packet of corn chips (any flavour you like) and create a single layer of them in a wide, microwave proof bowl.
Now grate some cheddar cheese (as much as you like) over the top of the corn chips. I think it's better using a fine grater to do this so that the cheese melts better, but if you only have a regular grater then that's OK.
Place another layer of corn chips on top, and then cover that with more grated cheese. Continue until you either have enough, or run out of corn chips and cheese.
I find that for best results, I cook it in several steps. Place the bowl in a microwave and cook on MEDIUM for about 20 seconds. Check how the cheese is melting, and if it needs more then cook on MEDIUM for another 20 seconds. Continue until the cheese is melted to your satisfaction. Doing it this way avoids the cheese melting too much.
Remove from the microwave, allow to cool slightly and then eat. The gooey cheese combined with the corn chips tastes simply fantastic!
If you did want to dress it up a bit, you could add some guacamole dip and/or sour cream on top as well.
