What To Do With Your Roast Beef Leftovers

Leftover roast beef recipes are very popular. People often have leftover roast beef after a barbecue, so here are some ideas for using it.

Cottage Pie

Cottage Pie is simply a version of Shepherd's Pie. The only difference is that it uses beef rather than lamb. You can find the Shepherd's Pie recipe here in the Easy Dinner Recipes section. Just substitute the leftover beef for the lamb.

Beef & Cheesy Potatoes

This is a really good, simple dish to make and it's one of the easier recipes for leftover roast beef. I think it's also a great meal the night after a big roast BBQ.

All you need are some jacket potatoes (whatever type you prefer) and the leftover beef. Firstly, bake the potatoes in a conventional oven at 180° Celsius / 350° Fahrenheit / Gas Mark 4 / Moderate oven for 90 minutes.

Remove from oven and cut off the top of each potato. Dig out the potato and put into a mixing bowl along with some grated cheese, salt, parsley, an egg (to bind everything together), a little butter. If you want, you could also add a little cayenne pepper to the mix to spice things up.

Mix everything together well and then restuff the potato skins. Turn the oven up to 220° Celsius / 425° Fahrenheit / Gas Mark 7 / Hot oven, and cook the potatoes for another 30 minutes.

When the potatoes have about 10 minutes left to cook, cut the beef up into chunks or slices and wrap in tin foil. Place in the oven with the potatoes to heat through.

Serve up and enjoy!


Just like with leftover lamb leftover roast beef is perfect for lunchtime sandwiches.

They go really well with things like lettuce and tomato, but you can also have them just with a little mustard or horseradish.

You can also heat the meat up a little first, as this will make it nice and juicy.

Nachos Mince

I already have a snack recipe for Nachos in the Easy Snack Recipes section but you can use leftover beef to make mincemeat to go with it.

Simply mince up the beef in a food processor and heat it through in a frypan along with tinned tomatoes and red kidney beans.

Spoon the mixture onto some corn chips, sprinkle grated cheese on top and then heat until the cheese has melted.

Don't forget the sour cream and guacamole to go with it!
