I think it's also a great meal the night after a big roast BBQ. All you need are some jacket potatoes (whatever type you prefer) and the leftover beef. Firstly, bake the potatoes in a conventional oven at 180° Celsius / 350° Fahrenheit / Gas Mark 4 / Moderate oven for 90 minutes. Remove from oven and cut off the top of each potato. Dig out the potato and put into a mixing bowl along with some grated cheese, salt, parsley, an egg (to bind everything together), a little butter. If you want, you could also add a little cayenne pepper to the mix to spice things up. Mix everything together well and then restuff the potato skins. Turn the oven up to 220° Celsius / 425° Fahrenheit / Gas Mark 7 / Hot oven, and cook the potatoes for another 30 minutes.
