section. Sandwiches This might sound obvious, I know, but you'd be surprised how many people don't think to use leftover lamb in a sandwich. I quite like to have it on its own with a little mint jelly and butter, and I always warm the meat up first. This makes it nice and juicy again. You could have it cold as a meat and salad sandwich as well (just put on some lettuce, tomato and maybe a little bit of chutney). Meat, Cheese and Apple Ploughman's This is a small variation on the Ploughman's Lunch where you cut the leftover lamb into chunks and serve with some chunks of cheddar cheese (or whatever cheese you like), fresh crusty bread and some fruit like apple or grapes. Personally I like to heat the meat first as it makes it juicier and taste better (just cut into chunks, wrap in tin foil and heat in a conventional oven for about 10 minutes at 180° Celsius / 350° Fahrenheit / Gas Mark 4 / Moderate oven.) You can have the bread plain, or with butter, or (as I like it) with some chutney spread on it. The important thing is to have nice fresh crusty bread - delicious!
