Apricot Chicken Recipe - A Great Tasting And Easy Slow Cooker Recipe

Apricot Chicken - the finished meal




This apricot chicken recipe is a delicious and simple to make dish. Use your slow cooker to effortlessly create a fantastic apricot chicken crockpot meal for your family!

Apricot chicken has been around for a long time but this recipe adds a few new flavour twists to this dish. Using your slow cooker, you can create a satisfying and tasty dinner.

Note: this recipe requires the chicken to be marinated overnight, or for at least 4 hours.

This easy apricot chicken recipe will feed four people.

What you'll need is:

  • Four 300 gram (10 ounce) chicken breasts (no skin)
  • 1 clove of garlic
  • A tablespoon of freshly grated ginger (from a jar is OK)
  • 1 tablespoon of ground cumin powder
  • 1 tablespoon of dried ground coriander
  • 1 teaspoon ground cinnamon
  • 2 tablespoons of vegetable oil
  • 30 grams (1 ounce) of plain flour
  • 400ml (14 ounces) of apricot nectar
  • 1 tablespoon of honey
  • 1 tablespoon of lemon juice
  • 60 grams (2 ounces) of almond slivers (or pine nuts)
  • 4-5 stalks of fresh coriander
  • 120 grams (4 ounces) of Jasmine rice (or plain white rice)
  • salt
The equipment you'll need is:
  • A slow cooker / crockpot
  • A large flat dish, big enough for the chicken breasts
  • A mixing bowl or jug
  • A garlic crusher
  • A wooden spoon
  • A saucepan with lid
  • a strainer

Preparation

Place the chicken breasts into the flat dish, side by side.

Peel and crush the garlic into the mixing bowl. Add the ginger, cumin powder, coriander and cinnamon. Finally, add the vegetable oil to the bowl. Mix everything together well using a wooden spoon.

Pour this mixture evenly over the chicken breasts. Make sure the chicken is covered as much as possible. Now cover the dish with plastic wrap and place in the fridge overnight to marinate, or for at least 4 hours.

When you're ready to start cooking, remove the chicken from the marinade and lightly dust with the flour. An easy way to do this is to spread some flour over a cutting board and roll the chicken breasts through it.

Cooking

Put the chicken into your slow cooker side by side, as snugly and evenly as possible. Add a little salt over each chicken piece.

Now pour in the apricot nectar, and add the honey and lemon juice. A good tip for the honey is to spray the tablespoon with some oil before pouring the honey into it. This way, the honey will slide ride out into the slow cooker with nothing left behind.

Turn on the slow cooker to HIGH, and cook for 4 hours.

When the chicken is nearly ready, fill your saucepan with water, add a little salt and put it on the stove to boil. Once boiling, add the rice and boil for 12 minutes, stirring occasionally to prevent any rice sticking to the bottom. Drain thoroughly when cooked.

While the rice is boiling, wash the coriander and remove the stalks. Tear the leaves up into small pieces and set aside.

When the rice is cooked and has been drained, place it back into the saucepan. Now add the shredded coriander leaves and mix them through the rice until you get an even green and white appearance.

Serving

Place the rice and coriander mix on each plate. Now put a chicken breast on each plate. You can leave them whole, or slice and arrange them if you prefer.

Using a spoon, drizzle the remaining liquid from the slow cooker over the chicken.

Finally, scatter the almond slivers of pine nuts over the top.
